Harry Pierre’s Chocolate Chip Campfire Cupcakes
- 1 box yellow cake mix
- 1 cup mini morsel semi-sweet chocolate chips
- 48 miniature marshmallows
- 1 – 16 oz container of your favorite flavored ready to spread frosting
- 24 paper cupcake baking cups
- small Ziploc bag
Harry Pierre loves these cupcakes! They are easy to make and easy to *transport since the frosting is on the inside of the cupcake!
Little Buddies: wash hands with soap and water before making cupcakes.
Preheat oven to 350 degrees.
Make cake batter in mixing bowl according to recipe on box (you will need water, oil and eggs).
Stir in chocolate chip morsels.
Count out your paper baking cups and place in muffin baking pan. Spoon batter into paper cups 1/2 to 2/3 filled.
Bake for 18 – 22 minutes.
Adult: remove cupcakes from oven.
Little Buddies: stick a wooden toothpick in center of cupcake. If the toothpick is clean, the cupcake is done. If it is not clean and the batter or lots of moist crumbs are on the toothpick, the cupcakes need to bake a little longer.
Cool the cupcakes in pan 6 – 10 minutes before removing them. Then place cupcakes on wire rack and allow the cupcakes to cool completely. If using one pan for baking, allow 15 minutes for the pan to cool before reusing it.
Little Buddies: once cupcakes are completely cooled, take your clean finger and *insert into the middle of the cupcake as far down as you can go and slowly pull out.
Place half container of frosting in the Ziploc baggie.
Adult: take scissors and cut-off tip of bottom one corner of bag.
Squeeze the bag gently to fill up the cupcake hole with frosting.
Place two marshmallow’s on top of filled hole.
