Mom’s aMazing Breakfast Biscuits

Ingredients:

3 cups of Biscuit Mix                                                             
2 bunches Green Onions, chopped
Milk                                                                                        
½ tsp. Garlic Powder
1 lb. thick Applewood Smoked Bacon, chopped                  
2 Colby Jack Cheese Sticks, diced
1 ½ cups Sharp Cheddar Cheese, shredded

 Now:

Preheat oven to 450 degrees.

Little Buddies - place chopped bacon in a cold frying pan. 

Adult - cook bacon in pan over medium heat until brown and slightly crispy; do not overcook.  Drain and place in bowl with paper towels.

Little Buddies – with several folded paper towels, press down on bacon to *absorb all the *excess grease.

 Prepare biscuit mix with milk in mixing bowl according to package.

 Stir cheese into prepared biscuit mix.  Add the green onions, but save a small amount for decorating the plate of biscuits.  Add garlic powder.  Stir in the bacon.If mixture is a too thick, add a little more milk.

 Using two spoons - one to scoop, the other to scoop off spoon - place a spoonful of mixture onto a lightly greased baking pan.

 Bake in preheated oven for 8 – 10 minutes.

 Optional – place diced cheese and remaining green onionsaround biscuits on edge of plate.

Makes 13 small to medium biscuits.

 Ingredients:

  • Pancake Mix                          
  • 5 Maraschino Cherries per pancake
  • Milk                                        
  • 1 Banana, sliced – two slices per pancake
  • 1 egg, lightly beaten               
  • 1can Mandarin Oranges in light syrup, approx. 16 wedges per pancake
  • 1 Tbsp oil                                
  • Blueberries – two per pancake
  • 1 Tbsp lemon juice                 
  • Cantaloupe – ½ -inch piece, cut into a triangle, per pancake
  • 2 Tbsp sugar                          
  • Sweet Seedless Grapes – two per pancake
  • 1 tsp vanilla                            
  • 2 Tbsp Butter

Now:

Make your favorite pancakes for at least three large or six medium pancakes using milk as the liquid instead of water in a mixing bowl.

Gently stir in the egg, oil, lemon juice, sugar and vanilla to pancake mixture.

Let rest while you prepare fruit.

Rinse blueberries and grapes.  Pat dry.

Drain the oranges and place on a paper towel to dry.

Slice the cherries in half and place on a paper towel to dry.

Slice grapes lengthwise in half.  Continue slicing grape lengthwise for the eyelashes.

Cut a small triangle with a piece of cantaloupe for the nose.

Adult – heat frying pan or griddle to medium high heat.  Make sure the pan is heated all the way through so the pancakes will be golden brown.

Melt butter in microwave.  Lightly grease your pan with melted butter.

Pour 1 cup of batter into hot pan.  Cook the pancake 2 – 3 minutes, until tiny bubbles have formed across the top of the pancake.  Flip over and continue cooking for 2 minutes or until golden brown.  

Peel and slice banana.

Place the pancake on a plate and surround it with the mandarin oranges.

Add two slices of banana and place a blueberry atop the banana for the eyes.

Add the sliced grapes for the eyelashes.  The cantaloupe for the nose.

Make a big smile with the cherries.

Dad’s Hearty Bacon Bonanza Grilled Cheese Sandwich

Ingredients

  • 3 slices cracked wheat sour dough bread                 
  • 1 Roma tomato,seeded &chopped
  • 3 slices Havarti cheese                                                    
  • ½ large sweet onion, chopped
  • 3 slices Medium Cheddar Cheese                                
  • ½ lb thick Applewood Smoked bacon, diced
  • honey mustard
  • butter
  • thin regular potato chips
  • paper towels

Now:

Cut tomato in half lengthwise.  Take a spoon and scoop out the inside of tomato and discard, and chop tomato.  Set aside.  

Adult: chop bacon

Little Buddies - place chopped bacon in a cold frying pan. 

Adult - cook bacon in pan over medium heat until brown and slightly crispy; do not overcook.  Drain and place in bowl with paper towels.

Little Buddies – with several folded paper towels, press down on bacon to *absorb all the *excess grease.

Adult: remove grease from pan except for one tablespoon or less of oil. Sauté onions in oil over medium heat until soft.

Butter one side of each slice of bread.

Adult: place all three slices of bread, buttered side down, on a medium heated frying pan or griddle.

Spread inside of bread with honey mustard.

On one slice of bread place two slices of Havarti cheese, side by side, and one slice of Cheddar on top of Havarti cheese. 

On another slice of bread place two slices of Cheddar cheese, side by side, and one slice of Havarti on top of Cheddar cheese.

Add bacon over cheese.Add a layer of potato chips over bacon. Add tomatoes over potato chips.Add onions over tomatoes.

When bread is slightly browned and cheese melted, add remaining slice of bread over one stack of sandwich.  Carefully lift up that stack with a large spatula and place on top of final stack of sandwich.

Remove sandwich and place on plate.  Cut in half and enjoy!

Ingredients

1 box yellow cake mix
1 cup mini morsel semi-sweet chocolate chips
48 miniature marshmallows
1 – 16 oz container of your favorite flavored ready to spread frosting
24 paper cupcake baking cups
small Ziploc bag

Harry Pierre loves these cupcakes!  They are easy to make and easy to *transport since the frosting is on the inside of the cupcake!

Little Buddies: wash hands with soap and water before making cupcakes.

Now:

Preheat oven to 350 degrees.

Make cake batter in mixing bowl according to recipe on box (you will need water, oil and eggs).

Stir in chocolate chip morsels.

Count out your paper baking cups and place in muffin baking pan. Spoon batter into paper cups 1/2 to 2/3 filled.

Bake for 18 – 22 minutes. 

Adult: remove cupcakes from oven.

Little Buddies: stick a wooden toothpick in center of cupcake. If the toothpick is clean, the cupcake is done.  If it is not clean and the batter or lots of moist crumbs are on the toothpick, the cupcakes need to bake a little longer.

Cool the cupcakes in pan 6 – 10 minutes before removing them. Then place cupcakes on wire rack and allow the cupcakes to cool completely. If using one pan for baking, allow 15 minutes for the pan to cool before reusing it.

Little Buddies: once cupcakes are completely cooled, take your clean finger and *insert into the middle of the cupcake as far down as you can go and slowly pull out.

Place half container of frosting in the Ziploc baggie.

Adult:  take scissors and cut-off tip of bottom one corner of bag.

Squeeze the bag gently to fill up the cupcake hole with frosting.

Place two marshmallow’s on top of filled hole.
